350g de farine
4 œufs
21g de levure fraiche
45g de sucre
8g de sel
220g d beurre très froid
1 jaune d’œuf
2 cas de fleur d’oranger
Mélanger tous les ingrédients avec le crochet du robot pendant 10 minutes ; au bout de ce temps ajouter le beurre coupé en petits morceaux et de nouveau pétrir pendant 8 minutes.
Placer la pâte dans un saladier et filmer au contact. Laisser reposer une nuit au fridge.
Au bout de ce temps sortir la pâte et l’aplatir à la main pour dégazer.
L’étaler au rouleau. Avec un petit emporte-pièce (env 10cm de diamètre) réaliser dans la pate des cercles . Faire chevaucher ces cercles ; les enrouler puis couper le rouleau au milieu.
Dans un moule haut (en silicone type moule à charlotte) poser ces petits roulés de pâte les uns à côté des autres.
Laisser reposer pendant 1à 2 heures dans un endroit chaud.
Préchauffer le four à th 170°.
Dans un bol fouetter un jaune d’œuf avec deux cuillères à soupe de fleur d’oranger ; brosser au pinceau les morceaux de pâte ; enfourner pour 15 à 20 minutes.
Brioche Orange blossom water

Spread it with a roller. With a small cookie cutter (approx. 10cm in diameter) make circles in the dough . Overlap these circles; Roll them and then cut the roll in the middle.
In a high mold (silicone mold type charlotte) lay these small rolled dough next to each other.
Let stand for 1 to 2 hours in a warm place.
Preheat oven to 170 °.
In a bowl whisk an egg yolk with two tablespoons of orange blossom; Brush the pieces of dough with a brush; Bake for 15 to 20 minutes.
