un petit clin d'oeil aux belges avec les couleurs de leur drapeau !!!
Pour 4 personnes
33cl de jus de tomate
2 feuilles de gélatine
4 oeufs bio
quelques croûtons
de la tapenade
sel de céleri poivre et piment Eespelette
Réhydrater la gélatine dans de l'eau bien froide.
Faire chauffer le jus de tomate sel de céleri et poivre ; y verser la gélatine essorée.
Verser dans de petits bols ; direction le fridge pour au moins 4 heures.
Dans une casserole faire bouillir de l'eau avec une cuillère a café de vinaigre.
Dans un petit ramequin casser un oeuf et approcher ce ramequin à la surface de l'eau bouillante ; faire tomber l'oeuf et faire cuire pendant trois minutes. Récupérer l'oeuf avec une écumoire et verser dans un saladier d'eau froide.
Recommencer pour les trois autres oeufs.
Au moment du service poser l'oeuf sur la gelée accompagner de croûtons de tapenade. Ouvre l'oeuf qui coule ; parsemer de piment d'Espelette.
TOMATO JELLY POACHED ORGANIC EGG AND BLACK OLIVE PASTE

Serves 4
33cl tomato juice
2 gelatin sheets
4 organic eggs
few croutons
black olive paste (tapenade)
celery salt and Espelette pepper
Re-hydrate the gelatin in cold water.
Heat the tomato juice, celery salt and pepper, pour the drained gelatine.
Pour into small bowls; direction to the fridge for at least 4 hours.
In a saucepan boil water with a teaspoon of vinegar.
In a small cup break an egg and approach the cup on the surface of boiling water, drop the egg and cook for three minutes. Retrieve the egg with a slotted spoon and pour into a bowl of cold water.
Repeat for the other three eggs.
A the time of service put the egg jon the tomato elly and add the tapenade croutons. Open the egg with the running yolk , sprinkle with Espelette pepper.
