L'autome et ses couleurs !! des tons ...caramel pour cette recette !!
Et un mea culpa où je m'étais étonné d'un nouveau Best of de patisserie sorti en librairie ; mal m'en a pris car on offert celui de Christophe Adam ; pour me punir j'ai réalisé sa tarte caramel mais pour rester dans l'amusement voici une version destructurée ! Et un joyeux anniversaire et une grosse bise à Numa pour ses 18 ans !

125g de beurre
210g de farine
85g de sucre glace
25g de poudre d’amande
1 œuf
Poudre de vanille
Crémeux mascarpone caramel
2 feuille de gélatine
90g de sucre en poudre
115g de crème fleurette
50g de beurre
180g de mascarpone
Caramel Chocolat
120g de sucre semoule
40 g d’eau
250g de crème fleurette
1,5 feuille de gélatine
30g de chocolat au lait
Fruits secs caramélisés
45g sucre glace
20g de noix de pécan
20g de noisettes
Pour le crumble
Mélanger tous les ingrédients ; façonner en boule puis au bout d’une heure étaler et couper en petits dés ; cuire à four chaud the 200 sur du papier cuisson pendant 10minutes ; laisser refroidir .
Pour le crémeux caramel mascarpone
Mettre la gélatine à réhydrater dans une grande quantité d’eau froide.
Mettre le sucre semoule dans une casserole et chauffer à sec. Dans une autre casserole chauffer la crème ; hors du feu décuire le caramel en versant la crème chaude . Attention ça bouillonne !
Ajouter le beurre en morceaux puis ajouter la gélatine essorée ; mixer ; ajouter le mascarpone en mélangeant avec une maryse ; laisser tiédir et mettre en poche. Direction le fridge pour 3 heures .
Caramel Chocolat
Mettre la gélatine à réhydrater dans une grande quantité d’eau froide
Faire un caramel avec le sucre et l’eau ; faire chauffer à part dans une autre casserole la crème ; verser la crème sur le caramel ; puis verser le tout sur le chocolat bien mélanger ; ajouter la gélatine et mixer ; verser dans une poche . Direction le fridge pour 3 heures .
Service
Sur l’assiette de service parsemer le crumble ; couper le bout des deux poches ; ajouter des tronçons de crémeux mascarpone (je coupe la matière au ciseaux ) ; ajouter le caramel chocolat ; verser en sommité (et un peu partout ! ) des fruits secs caramélisés (mélanger dans une casserole tous les ingrédients et remuer jusqu’à brunissement) .
CARAMEL ALL INCLUSIVE
125g of butter
210g flour
85g icing sugar
25g ground almonds
1 egg
Powder Vanilla
Creamy mascarpone caramel
2 gelatin sheet
90g sugar
115g whipping cream
50g butter
180g mascarpone
caramel Chocolate
120g caster sugar
40 g water
250g whipping cream
1.5 gelatin sheet
30g of milk chocolate
Caramelized dried fruit
45g icing sugar
20g pecan
20g hazelnuts
For the crumble
Combine all ingredients; shape into a ball and then after an hour spread and cut into small dice; bake in a hot oven 200°C on the baking paper for 10 minutes; cool.
For the creamy mascarpone
Add gelatin to hydrate into a large amount of cold water.
Put the sugar in a saucepan and heat to dry. In another pan heat the cream; Remove from heat pour the hot cream on the toffee. Watch out it will bubble !
Add the butter into pieces and add the softened gelatine; mixer; add the mascarpone by mixing with a spatula; let cool and put in a pastry bag . Direction to the fridge for 3 hours.
caramel Chocolate
Add gelatin to hydrate into a large amount of cold water
Make a caramel with the sugar and water; Heat the cream separately in another pot; pour the cream over caramel; then pour over the chocolate mix; add gelatin and mix; pour into a pastry bag . Direction to the fridge for 3 hours.
service
On the serving dish sprinkle the crumble; cut off the end of the two pastry bags ; add some “logs” of creamy mascarpone (I cut the material with scissors); add chocolate caramel; put on top caramelized nuts (mix in a saucepan all ingredients and stir until it browns).
